Country 34: Chile
So it's been a while.
Life has gotten in the way, I'm not going to lie. Suddenly it's September and literally 2 months since I posted my last meal. In fact, I actually cooked Chile on the 28th June. That's how late this is.
I'm going to be completely honest here and say that I have no memory of the food. When beginning to write this blog I even had to ask Nick "do you remember what we ate?" and neither of us could. It is only as a result of going through my photos and finding the pictures I took do I actually remember it. Additionally, I have long deleted the recipes from my internet tabs, so this blog post is going to be a wee bit of a struggle - although in saying that, I can probably find them quite easily.
Despite it being a hot minute since I last posted, nothing dramatically new is going on in the world. Coronavirus is still around, the UK is going back into partial lockdown as of tomorrow (in that only 6 people can hang out rather than the 30 it has been over the last month or so). I have a new job which I am extremely grateful for, especially considering it's extremely likely that the world is going to be crazy for an uncertain amount of time and a global recession is imminent.
We have new flatmates who seem cool, they moved in about a month ago and they're social and friendly. We were lucky to get the entire 3 bedroom flat to ourselves throughout lockdown proper, and while it was sad to know that we wouldn't be having the whole place to ourselves anymore, I think we got very lucky with the people who have moved in.
And as of now, I am back into my Cook the World project. Which has been on hiatus for months. It's not like I haven't been cooking at all, but definitely since restrictions have lifted I've been out and about, seeing people and eating out and making up for the last 6 months of lost time. And you know what? No regrets. So I sidelined a hobby I've been enjoying for the last few months. So what? Worth it.
