Country 47: Dominican Republic - Pescado con Coco
I made this one in September and it's now December so my thoughts are a bit delayed and also I don't remember that much of it, but here we go anyway!
- Initially I didn't think there would be too much difference between Dominica and Dominican Republic. I guess because they are both in the Caribbean, but actually on a map they're still quite far apart from each other which was surprising because their names are so similar.
- Both of them are very fish-dominated cuisines which makes sense because they're islands.
- Dominican Republic is one of those countries that I used to sell all-inclusive holidays to, where people wouldn't bother leaving the resort. My mum and I once talked about a holiday there together but we're not resorty people so we would've stayed somewhere else and gone out to explore. That's my preferred way of holidaying anyway.
And about the meal...
- It was unusual having coconut milk and lime flavours because to me they're always quite Thai flavours, but this was a little more subtle than Thai I think.
- I really enjoyed it, I know that much!
- I used seabass - it's impossible to find snapper in London at an affordable price point and seabass did the job perfectly fine. I also used fillets rather than whole fish as, again, these are easier to find and certainly easier to eat!
- I served mine with rice and some steamed green vegetables, for health.
Overall I would say that this was a good meal! Subtle, but tasty overall. I would happily make this again.
