Chad: Sweet Potato Fritters with a Cinnamon Honey Sauce

I love hashbrowns, and I love them even more when they're made with sweet potato.

I'm not sure what it is about sweet potato, but I do think they're absolutely excellent. There was one point a year or so ago that my partner and I would constantly have sweet potato fries, to the point where we actually got sick of them so stopped making them / ordering them. I think that some foods can be eaten in excess - and actually, I think if someone ate one type of food for every meal, they'd start to get completely fed up with it. I know I would.


Either way, I'm always excited to expand my sweet potato repertoire so I was excited to see that Chad had these sweet potato fritters. That being said, the original blog post I found this recipe from said that she couldn't find a reason as to why sweet potato fritters are so popular in Chad.

No biggie though, they're delicious no matter what.





Chad Sweet Potato Fritters with Cinnamon Honey Sauce
Makes about 6

Ingredients

  • 1 sweet potato, grated
  • 1 egg
  • 1/4 teaspoon cinnamon
  • 3 tablespoons flour
  • 3 tablespoons breadcrumbs
  • Salt and pepper
For the sauce:
  • 1/4 cup mayonnaise
  • 1/4 teaspoon cinnamon
  • 1 tablespoon honey
Instructions
  1. Combine grated sweet potato with the egg, cinnamon, flour and breadcrumbs. 
  2. Heat oil in a frying pan. Take dining-spoons of the mixture and flatten them in your hands before placing them carefully in the pan. 
  3. Fry until browned on either side, then remove from pan and allow excess oil to drain on paper towels.
  4. To make the sauce, combine all ingredients.
  5. Serve the fritters warm, with the sauce on the side. Enjoy!
