Cameroon: Njama Njama
Njama njama is one of the most popular green vegetables in Cameroon. I thought it was actually the name of the dish, but it turns out it is the name of the vegetable itself. It's also found in Nigeria and Kenya.
I didn't like it, but that's because the recipe I was following called for smoked fish and I opted to use kippers. Biggest mistake, it was, to put it mildly, gross. My partner ended up using the leftovers in a pasta dish to get rid of it from our fridge, which I was grateful for because the fish was making the fridge smell.
I also didn't have any njama njama (also known as nightshade) so I used a mix of spinach and kale - Swiss chard would also do the trick.
I'm not going to post my recipe because I completely botched it, but do follow this link here from African Bites to see the original recipe. I think if you were going to give this one a try, skip the smoked fish, or at least don't use kippers!
