Country 3: Algeria
I used to want to travel overland across northern Africa, from Morocco to Egypt. I studied Ancient Rome in university and was interested on the impact the Roman Empire had made in the southern Mediterranean. Then I learned a little more about Algeria and Libya and decided that travelling across them probably wasn't the smartest idea. While the biggest tourist attractions in Algeria are the Roman ruins, and the Sahara desert, the country has had a difficult history with civil wars and as a result, the security situation is perhaps not the greatest. I would love to go one day, so I'll keep this one on the list, but perhaps not right now.
Either way, Algeria was next on the list to cook. Finding recipes that were going to work for both vegetarian diets and didn't include hard-to-source ingredients proved to be a little tricky. The nut-free options wasn't the problem, as they seemed to fall predominantly in desserts, but everything that I could find included meat. So this was a bit problematic.
Eventually I managed to find two recipes that featured ingredients I had already, vegetarian and nut-friendly. Done and dusted.
