Country 6: Antigua & Barbuda

While working in the travel industry, I have sold a few holiday packages to Antigua. In non-coronavirus times, it's a popular island for all-inclusive flop-and-drop beach holidays. For me personally, I can't think of anything worse. When I go on holiday I like to visit lots of different places, spend all of my time out and about exploring the destination, speaking to the locals, and trying the different food. I couldn't even imagine spending a week in the same place, barely leaving the resort. But each to their own, and maybe a few days on the beach wouldn't go amiss.

Antigua is the first island nation that I have had to cook in this project which is cool. It's also the first country in the Caribbean, and on that side of the world in general. Branching out!

I've been thinking about the island nations a bit because I imagine that they will all have fairly similar cuisines. The history of each island is fairly intertwined with their neighbours, especially in the Caribbean, so I think it will be interesting to cook and eat the various differences between their dishes. Hopefully each island will have something that is specifically it's own. I'm looking forward to it!

The dishes I cooked last night were excellent. I'm really pleased, and I always feel so delighted with myself when something new I cook comes together. I was so let down and disappointed by Andorra that it's even a bigger bonus when I really love something I've cooked.
