Country 7: Argentina
I'm a New Zealand citizen. I've been living in London for just over four years on an Ancestry Visa, which means I'm allowed to work and reside in the UK for 5 years - thank you grandparents! This means that sadly, my time in Britain is nearly at its end point and in March 2021 I will be on my way.
My plan is South America. My partner is Latino and has wanted to go to South America since well before he met me - it's only because of me that he has delayed his trip. Coronavirus is certainly making it harder to plan as well. It was around this time that I was hoping to have our flights booked, but without knowing about borders being open or even which airlines will still be operating in March next year, it's tricky to start planning.
However, that doesn't take away from the fact that I was very excited to cook my first South American country. I was just undecided about what to cook. I did find a vegetarian version of a stew, but after Andorra I vowed that I wouldn't look at substitutes for meat dishes, but would look into either pescatarian or vegetarian dishes that already exist in each country.
So on the menu for Argentina we have:

- Queso y cebolla empanadas - flaky, delicious, pastries. Street food heaven!
- Chupin de pescado - a traditional fish and potato dish.
