Country 12: Bahamas
And so we begin a new letter. B. Of which there are 17 countries beginning with this letter. I actually thought there were only 16 but I must have miscounted.
I was excited for Barbados cuisine. I've not been to the Caribbean, but after how delicious my Antigua and Barbuda meal turned out, I was excited to return to this region of the world to see what else the countries there have to eat.
I think I've said in a previous post that I really need to sort out my time management when it comes to cooking. If I'm cooking several different dishes for a meal, I find that more often than not one of the dishes is completely ready before I've even started prepping another dish, which means that something goes cold, or gets overcooked, or isn't cooked enough when I serve.
Barbados changed that completely. I nailed it. I had several timers set up so that I knew when to start my second dish, and I read through the entire instructions of each recipe before I started so I knew exactly how long I needed before I had to start on something else. It meant that everything was hot and ready and all on the plate at the same time and for three dishes I would say that's quite a feat! I don't want to toot my own horn, but I crushed it. Plus, everything was bang on delicious so you know what, I will tooth that horn. I deserve it.
